A Notary must be convinced of the signer's willingness to enter into the transaction that is being notarized. If the Notary is in doubt of the signer's willingness, apart from undue influence or pressure from others present, the Notary should ask the other parties to leave the room so as to better determine if the signer truly is acting of their own free will.
If the Notary continues to have concerns about whether the signer is being subjected to undue pressure to sign the document(s), the Notary should refuse to continue with the notarization.
